In here, you will find recipes to use for all occasions: whether you need a quick everyday dish for your supper, something more adventurous for dinner parties, or something completely different inspired by international cuisines, the chefs from Restaurant Associates can help you out. I have been personally and closely involved with the development of many of the chefs featuring in this book, it is a celebration of their skill, talent and dedication to the craft of cooking. I am particularly pleased that they have chosen, in many of the dishes, not to get carried away and let ego dictate some gloriously complicated recipe, but instead, produce food that is easy to reproduce for the keen amateur and home cook in the casual dining section. It has been no secret to me that the chefs who work within this hidden side of our industry are very talented individuals, developing and cooking food that would attain Michelin star status in the restaurant world.
